Chicken Skewers & Tahini Sauce
Tahini is a rich, earthy, paste made of ground-up sesame seeds, widely used in the Middle East and Mediterranean regions. It’s quite nutty on it’s own, but jazz it up with some lemon juice, soy sauce and garlic and it becomes this amazing delicious dipping sauce for meat and veggies, as well as a marinade, and even salad dressing.
What you'll need:
For the sauce:
4 Tbsp Tahini
1 Tbsp soy sauce
2 tsp lemon juice
1/4 tsp garlic powder, or small clove minced
1-2 Tbsp warm water, as needed to thin out
For grilling:
1 lb of chicken (and/or steak)
1 tsp McCormick's Garlic and Herb seasoning
All your favorite veggies
pinch of salt
1 Tbl olive oil for cooking
How to make it:
Preheat the grill. Soak wooden skewers in water for 10+ minutes to keep them from burning up.
Make the sauce. Whisk all of the ingredients in a small bowl. Tahini is thick like peanut butter, so to thin it out whisk in warm water 1 Tablespoon at a time. It'll separate and clump up until it incorporates together again. Add more water as needed.
Prepare the chicken. Slice thin the long way and weave a skewer through the meat. Sprinkling with seasoning and grill for 3-5 minutes on each side.
Chop the veggies and toss in olive oil, then salt. Use a grill plate, cast iron skillet, or grill basket to char the veggies on the grill. Cook until fork-tender.
Drizzle the tahini sauce over the meat, but have the bowl handy for dipping - it's that good.
