Classic Hummus
Homemade hummus couldn't get any esier to make yourself. With a handful of pantry-staple ingredients and a blender, you can make a delicious hummus dip that's tastier and healthier than store-bought.
What you'll need:
15oz can organic chickpeas, drained (reserve 1/3 cup of the liquid)
1/3 cup extra virgin olive oil
2 Tbl tahini
Juice from 1/2 lemon
1 small-medium clove of garlic, roughly chopped
1 tsp paprika
1 tsp salt
parsley, for garnish
pita bread or chips, for serving
How to make it:
Using a high-speed blender, add in chickpeas, reserved liquid, well stirred tahini, olive oil, lemon juice, garlic, paprika and salt. Purée until well blended and creamy.
The larger the garlic clove, the stronger/spicier it will be. You can also roast the garlic to give it a sweeter, milder garlic flavor - so delicious!
Pour into a bowl and drizzle some olive oil on top. Garnish with fresh parsley, and serve with pita bread.

Notes: Hummus lasts 7-10 days in an airtight container in the refrigerator.
