Crispy Chicken & Prosciutto Sandwich
I call these my food truck sandwiches. If I ever launched one, these would no doubt be on the menu. The chicken is marinated in milk and lemon juice, then lightly breaded and pan fried to perfection. Top that with salty "fancy bacon" prosciutto, gooey cheese and a pesto aioli - and you've got yourself a big bite of heaven.
What you'll need: Makes 4 sandwiches
1+ pound chicken breast or tenders
Fresh Steak Rolls (or favorite hoagie style bun)
For the marinade: (*Optional step)
Juice of half a lemon
1 cup milk (of your choice)
Pinch of salt
For the breading:
1/4 cup bread crumbs (panko or plain)
1/4 cup flour
1 Tbsp of McCormick's Garlic and Herb seasoning
Olive oil for frying
For the aioli:
1 Tbsp pesto
2 Tbsp mayonnaise
Squeeze of lemon
For the toppings:
6 oz Prosciutto (or less)
Mozzarella and/or Provolone cheeses
Your favorite leafy greens
How to make it:
*Optional Step 1 for more tender chicken: The night before (or for a minimum of one hour), grab a ziplock bag and put your prepared chicken in with milk of choice, lemon juice and a pinch of salt. Refrigerate. Taking the time to marinate the chicken will help tenderize it while absorbing moisture and flavor.
Marinate the chicken overnight or for at least one hour in a ziplock bag with milk, lemon juice, and a pinch of salt. Refrigerate for tenderizing and flavor absorption.
When ready to cook, spritz a large skillet with cooking oil and fry the prosciutto until cooked to your liking. Set aside on a plate.
Mix bread crumbs, flour, and McCormick's Garlic and Herb seasoning in a plate-bowl.
Heat 3 tablespoons of oil in the same skillet. Dredge each piece of chicken in the seasoned mixture and fry in the skillet for about 5 minutes per side over medium+ heat, until the thickest part reaches 160°F.
While cooking the second side of the chicken, place cheese slices on top to melt.
Layer more cheese on toasted buns and broil Lo on a baking sheet for 1 minute on the top rack until cheese melts and bun is lightly toasted. Watch closely to avoid burning.
Mix up your mayo, pesto and lemon juice in a small dish and dress both the buns. Build your sandwich like a staircase to heaven.
