Date Paste

Date paste is a must if you are eating a whole-food diet not only because it’s deliciously sweet, but because it’s the only sweet food that’s actually a whole food. Plus, it’s so easy to make!


What you'll need:
1 cup (about 13) pitted Medjool dates, packed
½ cup very hot water (bring to a boil and remove from heat)

How to make it:
Remove and discard the pits from the dates by scoring down the top side of the skin; pack into a 1 Cup measuring cup.

Combine dates and hot water in a bowl (or pan) and let sit for 1 minute. Make sure they all are fully covered and soaking by pressing and manipulating them down a little bit with a spatula. The water will become absorbed and a paste will start to form.

Place dates and all the liquid in a blender and process for 30 seconds or until completely smooth - or dump in a large mouth mason jar and mix with a handheld immersion blender. Add additional hot/very warm water 1-2 Tbl at a time as needed to thin out while mixing.

Store in a closed container in the fridge for up to 3-4 weeks.

You can add date paste to all sorts of your whole-food meals!
