Greek Chicken Gyros
Homemade Greek Gyros are so easy to make. They're packed with fresh flavors that leave you craving more. A creamy tzatziki sauce atop fresh veggies complements the herb marinated chicken perfectly. You just have to try these!
What you'll need: Serves 4
Chicken:
1-2 pounds chicken breast, cut into 1.5-inch cubes
Chicken Marinade:
1/4 cup olive oil
3 cloves garlic, crushed
juice of 1 lemon
2 Tbsp fresh parsley, chopped
1 Tbsp oregano (fresh or dried, chopped)
1/2 Tbl fresh mint, chopped
1 tsp salt
1 tsp fresh dill, roughly chopped
Gyros:
4 pita breads
Toppings:
Store bought Tzatziki Sauce
Romaine lettuce, chopped
Cherry tomatoes, quartered
Red onion, chopped
Cucumber, sliced and chopped into quarters
2 Tbsp feta cheese, crumbled
salt and pepper, to taste
How to make it:
Prepare the marinade. Add all of the ingredients for the marinade into a large ziplock bag. Add in the cubed chicken; press the air out of the bag and seal tightly. Press the marinade around the chicken to distribute. Place in the fridge to marinate at least 1 hour.
Prepare the salad toppings. In a medium bowl, combine the toppings except for the tzatziki sauce and toss together.
Grill the chicken. You can thread the chicken onto skewers to grill, or cook the individual pieces in a skillet over medium-high heat until fully cooked through. Feel free to use the marinade while cooking in a pan, but only add in while the chicken is raw. Otherwise, discard.
Assemble the gyros. Warm the pitas on the grill, about 1 minute per side. Then, on the centre each pita bread, add a few spoonfuls of the salad toppings in a line down the middle. Top with grilled chicken, and a generous scoop of tzatziki sauce. Fold the pita up and enjoy. You can also wrap it in parchment paper and twist the bottom to keep the ingredients inside.
