Honey & Mint Tropical Margarita
Not much else transports you to the Caribbean besides a refreshing tropical margarita! This is sunshine in a glass. Best part is you don't need a blender. Just shake, shake, shake, and pour. So good!
What you'll need: Serves 2
1/2 cup pineapple juice (I like Dole in the large can. Freeze the rest into cubes for future use!)
1/4 cup canned coconut cream
4 oz tequila
Fresh mint leaves
4 oz Club soda (or any flavor sparkling water)
For the rim:
1 Tbsp sugar + 1 Tbsp salt + lime zest
How to make it:
First, make the sugar, salt and lime zest for the rim. Place the sugar and salt into a small dish. Zest a lime into the sugar. Pinch and manipulate the zest into the mixture to release the essential oils. This makes the sugar infused with lime flavor instead of lime zest chunks just sitting there. Don't skip this step - it's totally worth it!
Swipe a lime wedge along the rim then dip the glass into the sugar mixture.
In a cocktail shaker, shake up ice, pineapple juice, coconut cream, tequila and mint leaves for about 30 seconds.
Drizzle inside the glass with honey. Don't be shy! This brings this drink over the top.
Fill a cocktail glass with ice.
Strain and pour over ice until three-quarters full, then top with sparkling water.
Garnish with a fresh mint sprig and enjoy!
