Italian Sausage Gnocchi Soup

We're still cruising steady in the 30s° here in Minnesota, so soup is on the menu. This one you'll definitely want to work into your week. It's comforting with a bit of kick, full of bright flavors and creamy textures.


What you'll need: Serves 4-6
2 Tbsp olive oil for cooking
1 medium onion, chopped
2 garlic cloves, minced
1 pound Italian sausage ground mild or spicy
1 tsp Italian seasoning
1 tsp salt
2 Tbsp tomato paste
8 oz can tomato sauce
32 oz carton chicken broth
16 oz package gnocchi
1/2 cup freshly grated parmesan
2 large handfuls fresh spinach
top with heavy cream *optional

How to make it:
Heat a little olive oil in a large pot or dutch oven over medium heat for 1 minute. Add the diced onion and cook until soft and translucent, about 5 minutes. Add the minced garlic and cook for 30 seconds or until just fragrant.

Add in the Italian sausage and cook until brown, breaking up into small chunks. Sprinkle in salt and Italian seasoning. Mix together.

Add the tomato paste and tomato sauce. Stir and cook on medium heat for about 10 minutes. It will begin to thicken and deepen in flavor.

Add broth and bring to a low boil. Carefully dump in gnocchi, and cook until tender and begins to float, about 4-5 minutes.

Mix in freshly grated Parmesan.

Add in spinach and stir until it becomes wilted.

Top with a drizzle of heavy cream if desired.
