No Bake Oatmeal Chocolate Bars
Ditch store-bought granola bars and make these super easy - and super delicious - no bake oatmeal bars.
What you'll need:
1/2 cup nut butter (almond butter, or peanut butter, etc.)
1/3 cup honey
1 1/3 cups old fashioned rolled oats
3/4 cup semi-sweet chocolate chips, or dairy free chips
1 tsp coconut oil
Top with Maldon flaky salt *optional
How to make it:
Line an 8x8” or 7x10” pan with parchment paper, allowing to paper the sides. Set aside. The smaller the pan, the thicker the bars.
In a medium size mixing bowl, mix the rolled oats, honey and nut butter together until well combined. Firmly press down the mixture evenly into the pan. The bottom of a measuring cup works great.
In a small bowl, melt chocolate and coconut oil together in 30 second increments until melted. Spread evenly over the oat base. Put in the fridge for 15-20 minutes or until the bars have firmed up.
Remove the bars from the pan by lifting up the paper. Cut into desired size and place back into the pan. Store in an airtight container in the refrigerator. Enjoy!
