Sparkling Jell-O Jigglers

These sparkling jello jigglers can either be made kid-friendly, or with a boozy kick. Both are fun and festing to ring in the New Year!


What you'll need: Makes 16 squares
4 cups sparkling cider, sparkling white grape juice, etc. (or champagne, prosecco, sparkling wine, etc.)
1/2 cup granulated sugar
1 Tbsp lemon juice
4 Tbl (4 envelopes) unflavored gelatin
Sprinkles, optional

How to make it:

Use a glass or ceramic 8x8 pan; or line a metal one with plastic wrap on all sides. Set aside.

Combine 3 cups sparkling liquid, sugar, and lemon juice in a heavy bottom saucepan over medium-low heat. Bring to a light simmer where the little bubbles are just starting to pop. Stirring with a whisk, cook until the sugar granules have completely dissolved. Turn off heat once completed. Do not let the mixture boil. 

Meanwhile in a separate bowl, sprinkle gelatin over one cup of liquid (remaining sparkling, vodka, etc.). Let bloom for one minute. 

Pour the solidified gelatin into the hot mixture; stir for about 2 minutes or until completely dissolved.

Pour into the glass pan and place in the fridge for at least 3 hours to overnight to set. Add brew glitter and stir before refrigerating if you want a beautiful glittery jiggler.


Top with sprinkles just before slicing into 16 squares and serving.
