Steak Taco Salad

This fast and fresh steak taco salad has tender pan-seared sirloin, grilled corn, diced tomatoes, cucumber, cotija cheese and a super simple taco seasoned dressing. This one will be on repeat for days.

What you'll need: Serves 4
For the salad:
1 pound sliced top sirloin
2 heads romaine lettuce
4 ears fresh corn, grilled
1 English cucumber, diced
10oz grape tomatoes, diced
Cotija cheese, crumbled

For the dressing:
1/4 cup sour cream
1-2 tsp water as needed
1/2 tsp cumin
1/2 tsp chili powder
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp paprika
salt to taste

How to make it:
Season steak with salt and pepper. Over medium-high heat, sear the steak for about 5-8 minutes on each side, or until the internal temperature reaches 145° F (medium). Set aside on a plate to rest.

Grill ears of corn over medium heat, rotating as grill marks appear. Set aside to cool, then slice the kernels off into a bowl.

Wash and pat dry the produce. Dice, then combine into a large serving bowl.

Mix together the dressing ingredients and adjust to taste as desired. Add in any leaked steak juices.

Slice the steak against the grain into thin pieces.

Assemble the salad and enjoy!
