Taco Chili

Fall comfort food is well underway. Taco Chili is an easy Crockpot or a quick stovetop meal that's perfect to enjoy while hosting on game day or a cozy evening in with the fam. 


What you'll need: Serves 8
2 pound ground beef, cooked
1 cup beef broth
15 oz Hunt's Tomato Sauce
15.5 oz can Cannellini Beans, with liquid
16 oz can Kidney Beans, drained
15 oz can Corn, with half the liquid
10 oz can Original Rotel (Diced Tomatoes & Green Chilies)
1 tsp onion powder - or 1/4 of an onion, diced
1 tsp garlic powder - or 2 garlic cloves, minced
1 oz Hidden Valley Ranch Seasoning Mix packet - or 3 Tbl Homemade Ranch Seasoning
1 oz Taco Seasoning Mix packet - or 3 Tbl Homemade Taco Seasoning
Hefty pinch of salt


Toppings options are endless:
Avocado
Sour cream or Greek Yogurt
Shredded cheese
Chopped green onion
Cilantro
Parsley
Tortilla chips or Fritos

How to make it in the Crockpot:
Brown the beef in a skillet on medium-high heat until cooked. Add taco seasoning to the meat and mix together, then transfer to the Crockpot. Add in all of the ingredients (except the toppings) and mix together.

Set the Crockpot to high, cover, and cook for 2 hours; or set to low and cook for 4 hours.

Eat it with a spoon or scoop up with chips, and top with your favorite taco toppings. Enjoy!

How to make it on the stovetop:
Using a dutch oven, brown the beef on medium-high heat until cooked. Add the taco seasoning, ranch packet, and all of the seasonings to the meat. Mix until combined. Turn the heat down to low-medium.

Add in the tomato sauce, beans, corn, and salsa. Stir together and let simmer for 20 mins. 

Eat it with a spoon or scoop up with chips, and top with your favorite taco toppings. Enjoy!
