Tequila Mint Pepino
This light and refreshing cocktail is my take on 'Nico's Pepino' from Nico's Taco Bar in Minneapolis. It is flavored with cool cucumber that's muddled with fresh mint and lime. You just have to try it!
What you'll need: Makes 1
2 oz blanco tequila
2 slices cucumber
1 sprig fresh mint
1 tsp agave
4 oz club soda
Squeeze of lime juice
Salt & sugar rim over a swipe of agave
How to make it:
Swipe the rim of a glass with some agave or lime juice. Then dip into salt-sugar mixture.
Wash and slice the cucumber and lime.
Gently muddle cucumber, mint and lime together into a cocktail glass. Don't over squish them.
Add tequila and agave, top with ice and stir.
Pour tequila mixture into the glass and top with club soda.

Notes: There are several agave varieties to choose from. Agave nectars are sold in light, amber, dark, and raw varieties.
Light agave nectar has a mild, almost neutral flavor, and is a great choice for use in delicate tasting desserts, baked goods, sauces, and beverages.
Amber agave nectar has a medium-intensity caramel flavor, and is suitable for many desserts, as well as sauces and savory dishes. It is an excellent "straight out of the bottle" syrup.
Dark agave nectar has stronger caramel notes, and imparts a delicious and distinct flavor to many desserts. It's best used in poultry, meat, and seafood dishes, and is wonderful as a topping for pancakes and waffles.
Raw agave nectar also has a mild, neutral taste. It is produced at temperatures below 118°F to protect the natural enzymes, so this variety is a perfect sweetener for raw foodists and the health conscious.
